I know German food, but...

what are some of the Franconian foods that

are native to Bamberg?

Smoked beer, schweinhaxe with beer sauce, and skewered meat are some. You might like to have a look at www.braugasthoefe.com for small German breweries with food and accomodation. There are a number of them in and around Bamberg. I%26#39;m sure that their websites%26#39; may have menus.

While in Bamberg we visited a pretty good Gaststube Scheiners. On their Speisenkarte they had of list of local specialties. You might use that list as a starter.
