We are arriving at the Frankfurt (Main) airport on a Sunday and want to get to Boppard. Can we use the Schönes-Wochenende-Ticket to ride the Sbahn to Mainz to catch a train to Boppard?

There should be no problem. S-bahns are part of the DB train network as well as being local transportation.
