My sister and I (in our late 20%26#39;s) want to make our way from Vienna/Salzburg up through Germany and eventually end up in Brugge. We have both been to Munich and Berlin before so are looking for some alternative stops as we make our way north. We have 5-7 days. Thanks!

From Vienna (not from Salzburg) you could stick to the rather direct route
Vienna - Passau - Regensburg - Nuremberg - Würzburg - Mainz - Middle Rhine Valley - Cologne - Brugge

For overnight (or two), I would suggest a stop in Wuerzburg, a nice middle-sized city with lots to see (look at the above-cited website). Then on to a village in the Middle Rhein Valley such as Bacharach, Oberwesel, Boppard, or, somewhat larger, Koblenz.
